<h2>Becky’s Carrot Zucchini Pineapple Muffins</h2>
<p><a href="http://mom-stuffcommunity.com/wp-content/uploads/2010/07/2010-5_beckys-carrot-zucchini-muffins.jpg"><img class="alignleft size-medium wp-image-1034" title="2010-5_beckys-carrot-zucchini-muffins" src="http://mom-stuffcommunity.com/wp-content/uploads/2010/07/2010-5_beckys-carrot-zucchini-muffins-300x199.jpg" alt="" width="300" height="199" /></a><em>My friend Becky is about as close to a “super mom” as you can get. A demanding full-time job, 3 kids, and manages to find the energy for fun adventures, running half marathons, lots of home-cooked goodness, and having a sense of humor about it all. If she wasn’t such an awesome person, I might just hate her a little</em>Here’s what she says about these carrot-zucchini muffins: “We make them in mini muffin tins. Oliver (baby) loves them and the other two will eat them if they are starving, so I save them for the ride home from school. They travel well and are reasonably good for you. Nate (toddler) is a huge fan of cooking with me and he loves this because he gets to do the cuisinart and the mixer. He also likes putting the cupcake papers into the baking pans. Even though he helps me make these, it doesn’t stop him from looking at the muffins later and saying – what is this green stuff mommy? Oh well!”</p>
<p>I gave them a test run recently and the kids I was with (ages 2-4) ate them right up. “Do these have vegetables in them?” asks the four year old, suspiciously.  Aren’t you amazed at the impressive power of observation that kids have when it comes to spotting that sliver of green or tiny speck of pepper? But despite the suspicion of vegetables lurking, the lure of these muffins was just too strong. Tiny nibble…. ”Mmmmm these are THE BEST!”. Big bite…. “More please!”</p>
<p>This makes a large batch (~2 dozen standard-sized muffins), so unless you have 3 hungry kids, you might cut it in half, freeze some, or best yet share with a friend. For little hands (or messy cooks), you can scoop the batter into a large zip lock bag, snip the corner and “pipe” into the muffin tins about 2/3 full.<span id="more-1033"></span></p>
<p>Shopping List: eggs; vegetable oil or unsweetened applesauce;  sugar; vanilla extract; 2 zucchini; 3 carrots; 1 can crushed pineapple in juice; salt; flour (all-purpose or can substitute 50% all purpose and 50% whole wheat); baking soda; baking powder; cinnamon; nutmeg; nut or dried fruit (optional)</p>
<ul>
<li>Combine 3 eggs, 1 cup of oil (or use apple sauce or a combination), 2 cups sugar (I reduced this by about a third), 2 teaspoons vanilla. Beat together until thick and foamy</li>
<li>In the cuisinart shred about 2 zucchini and 3 carrots so that you pretty well fill up a 9 cup cuisnart. Squeeze well to remove excess moisture and then stir into the to the mixture above.</li>
<li>Add 1 can of well drained crushed pineapple (Crushed is much better than cubes as no one notices them if they are crushed.)</li>
<li>In a seperate bowl, combine the dry ingredients: 1 teaspoon salt, 3 cups flour (or substitute 1.5 cups white and 1.5 wheat flour), 2 teaspoons baking soda, 1/2 teaspoon baking powder, 1.5 teaspoons cinnamon, 3/4 teaspoon nutmeg</li>
<li>Mix dry ingredients into the wet mixture, but don’t stir too much because it will make the muffins too heavy. (I usually stop using the mixer at this point and mix by hand.)</li>
<li>If you like, add 1c nuts and 1 c. raisins (My kids aren’t fans of these at all.)</li>
<li>Bake at about 350 for 15 – 25 minutes until they spring back in the center and a toothpick inserted into the middle comes out clean. Reduce the baking time for mini muffins. <p>* Eat low fat dairy</p>
<p>* Drink water and low calories non-carbonated liquids.</p>
<p>* Use liquid oils for cooking as an alternative to solid fats.</p>
<p>* Minimize too-high calorie junk food like chips, cookies, cakes, and regular frozen goodies.</p>
<p>Find baked chips and reduced calorie snacks. Or have a bit of fruit instead.</p>
<p>* Watch your portion sizes. Even an excessive amount of &#8220;healthy&#8221; food can cause an increase in weight.</p>
<p>Tips:<span id="more-733"></span></p>
<p>* Compare labels of similar foods, then pick the one with smaller amounts of saturated fats, cholesterol and sodium.</p>
<p>* Adults should consume below 2400 mg. of sodium per day. If you have high blood pressure, you need to target even less.</p>
<p>* Try adding spices and herbs in your cooking to substitute for salt for enhancing flavor.</p>
<p>A bit of Exercise Goes a long way. Something that gets you up and moving is good for you.</p>
<p>Some benefits you can receive from adding exercise to your routine:</p>
<p>* Decrease your risk of developing diabetes type 2 symptoms</p>
<p>* Decrease your risk of heart problems and stroke Lower blood pressure and cholesterol</p>
<p>* Reduce blood glucose (sugar) levels if you have diabetes, that may lessen your risk of developing diabetes-related complications</p>
<p>* Relieve tension * Make it easier to slim down</p>
<p>* Provide you with more energy</p>
<p>* Make it easier to sleep better</p>
<p>* Build stronger bones and muscle mass</p>
<p>You do not need to go to a gym, play sports or use fancy equipment.</p>

<p><a href="http://eatdrinkbetter.com/files/2009/07/photo-7-3.jpg"><img src="http://go635254.s3.amazonaws.com/eatdrinkbetter/files/2009/07/photo-7-3-300x225.jpg" alt="" width="300" height="225" /></a>I<em> shouldn’t have been surprised to discover that the bread I’ve been making for my family costs between $1.00 and $1.50 per loaf.  Comparable bread at the grocer/bakery will run $4.00 or more a loaf.  The variation in price depends on add-ins which provide flavor and texture.  This recipe is simple, quick and tasty.  We bake it twice a week.  This is a great project to have the kids help you with, they LOVE to knead and roll the dough.  The dough making only takes 10 minutes or so (the rest is rising/baking time).  This is a modified version of a recipe found at </em><a href="http://sweetsimpleliving.blogspot.com/"><em>Sweet Simple Living</em></a><em>.</em></p>
<p><strong><em>Simple Whole Wheat Bread</em></strong><em> (Makes 2 large loaves)</em></p>
<ul>

<p><em>In a large bowl combine (I use the bowl from my stand mixer)</em></p>
<ul>
<li><em>1 Tbs Honey or Agave</em></li>
<li><em>3 Tbs Active Dry Yeast</em></li>
<li><em>1 1/3 cup warm water (about 105-115 degrees Fahrenheit)</em></li>
</ul>
<p><em>Allow yeast to activate and bubble for about five minutes.</em></p>
<p><em>Turn mixer on low and begin adding:</em></p>
<ul>
<li><em>Another 1 1/3 cup warm water</em></li>
<li><em>1/2 cup olive oil</em></li>
<li><em>1/2 cup molasses</em></li>
<li><em>1/2 cup honey or agave</em></li>
<li><em>2 tsp Kosher salt</em></li>
</ul>
<p><em>Now it’s time for your add ins… whatever you add here will reduce your overall amount of wheat flour added at the end.  If you want a simple WW Bread with no seeds, skip this part and add closer to the 7 cups of WW flour at the end.  We add:</em></p>
<ul>
<li><em>1/2 cup sunflower kernals</em></li>
<li><em>1/2 cup slightly crushed flax seeds (I mix golden and black)</em></li>
<li><em>1/4 cup poppyseeds</em></li>
<li><em>1/4 quinoa</em></li>
</ul>
<p><em>While continuing to mix on low speed, begin adding:</em></p>
<ul>
<li><em>Whole Wheat flour, 1 cup at a time.</em></li>
</ul>
<p><em>It may take up to 7 cups… I usually end up adding 5 1/2-6 with the add in seeds.  If your mixer won’t hold the full amount, you may have to remove and finish the mixing process by hand.</em></p>
<p><em>You know you have added enough flour when the dough becomes less sticky and more like, well dough. <img src='http://mom-stuffcommunity.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   Now, turn it out on a lightly floured surface and knead for 8-10 minutes.  It should be quite elastic and smooth.  Place your ball of dough into an oiled bowl and allow to rise for an hour or until double in size.  (See my tip below for proofing your dough.)</em></p>
<p><em>After the dough has risen, punch down and remove from the pan to a lightly floured surface.  Now, use a knife to divide your dough into two halves.  Roll each half out into a rectangle about 9 inches wide by 14 inches long.  You will now roll the rectangles of dough jelly-roll style, pinch the ends closed and place in a prepared bread pan.  I like to brush a small amount of egg white and water mixture on the top prior to rolling to help the bread stick together nicely and not leave gaps while baking.</em></p>
<p><em>Now allow your bread to rise again for about 30 minutes, then bake at 375 degrees Fahrenheit for 30 minutes.  Cool in the pan for 10 minutes or so prior to turning out onto a cooling rake.  The bread slices best when fully cooled, but I can never resist a slice or two right out of the oven!</em></p>
<p><em>My proofing trick is to place a small pan of water onto the rear burner and boil.  Once its at a rolling boil, turn the burner off.  Place the dough next to the pan of water.  Once the burner is no longer red, lay a towel over the water pan and dough.  The combination of heat and steam provide an ideal situation for rising.</em></p>

1/4 tsp. nutmeg<br />
1/4 tsp. allspice<br />
Whipped Cream<br />
Mix crust ingredients together, just till coated and crumbly. Press onto the<br />
bottom and 2/3 up the sides of an 8&#8243; springform pan. Bake for 5 mins. at<br />
350. Set aside. Combine cheese, sugar and vanilla in large bowl, mix until<br />
smooth with an electric mixer. add pumpkin eggs,and spices, beat till smooth<br />
and creamy. Pour into the crust. Bake for 60−70 mins.or till the top turns a<br />
bit darker. Remove from oven and allow to come to room temperature, then<br />
refrigerate. After it has thoroughly chilled, remove the pan sides and cut.<br />
Serve with whipped cream.</em></h3>

If you have not visited her site yet you are missing out on one of the best collection of recipes. Today it is freezing cold across most of the US so I want to share a hot soup recipe to warm you up. This Broccoli-Cheese Soup is perfect filling for a bread bowl. Hot Broccoli-Cheese soup and the warm aroma of the bread bowls  sounds like the perfect comfort food for this cold weather. ENJOY!</h3>
<h3><a href="http://countrycookingwithjanille.blogspot.com/2010/01/broccolicheese-soup.html"><em>Broccoli−Cheese Soup</em></a></h3>
<h3><em>1 1/2 pounds broccoli, fresh<br />
2 cups water<br />
3/4 teaspoon salt<br />
1/2 cup cornstarch, mixed with 1 cup cold water<br />
1 pint half and half<br />
1 pound Velveeta<br />
1/2 teaspoon pepper<span id="more-298"></span><br />
Steam or boil broccoli until tender.<br />
Place half−and−half and 2 cups water in top of double boiler.<br />
Add cheese, salt and pepper. Heat until cheese is melted.<br />
Add broccoli. Mix cornstarch and water in small bowl.<br />
Stir into cheese mixture in double boiler and heat over<br />
simmering water until soup thickens.</em></h3>

<div><em><strong>2 1/2 cups warm water (105−115 degrees Fahrenheit)<br />
2 packages active dry yeast<br />
1 Tbsp. salt<br />
1 Tbsp. sugar<br />
2 Tbsp. oil<br />
6 1/2 − 7 1/2 cups bread flour<br />
1 egg, beaten<br />
1 Tbsp. milk<br />
Measure warm water into large bowl. Sprinkle in yeast; stir until dissolved.<br />
Add salt, sugar, oil and 3 cups flour; beat until smooth. Add enough additional flour to make a stiff dough. Turn out onto lightly floured board;<br />
knead until smooth and elastic, about 10 to 12 minutes. Place dough in bowl<br />
that has been lightly coated with nonstick spray, turning to grease top.<br />
Cover; let rise in warm place until doubled, about 1 hour.<br />
Grease outside of 12, 10−ounce custard cups or oven−proof bowls of similar<br />
size.<br />
Punch dough down; divide into 12 pieces. Cover and let rest 10 minutes.<br />
Spread each piece into a circle about 6 inches in diameter. Place over<br />
outside of bowl, working dough with hands until it fits. Set bowls, dough<br />
side up, on baking sheet that has been coated with nonstick spray. Cover<br />
with plastic wrap; let rise in warm place until doubled, about 30 minutes.<br />
Combine egg and milk; gently brush mixture on dough. Bake at 400 degrees<br />
Fahrenheit for 15 minutes until golden brown. Using potholders, carefully<br />
remove the bowls. Set bread bowls open side up on baking pan; bake 5<br />
minutes. Makes 12 servings.<br />
For larger bowls, use oven−proof bowls that are approximately 6 inches in<br />
diameter. Divide dough into 6 portions. Frozen bread dough also can be used.<br />
A 1−pound loaf will make 2 large or 4 small bowls.</strong></em></div>

<div><em>2 Cup Bran<br />
2 Cup Whole wheat flour<br />
1/2 Cup Nonfat dry milk powder<br />
3 Tablespoon Brewer&#8217;s yeast (optional)<br />
1 Teaspoon Salt<br />
1/4 Cup Oil<br />
1 Tablespoon Molasses<br />
1 Cup Water<br />

water. Mix well. Divide into three parts and roll out as thin as possible on<br />
greased cookie sheets. bake in 350 F oven 15−20 minutes, or until lightly<br />
browned and crisp. If dough is not completely dry, turn oven off and let it<br />
remain longer. Break into small pieces. Store in airtight container. Makes 1<br />
lb of cereal.</em></div>

<p>The <a href="http://www.mom-stuffcommunity.com/">Mom-Stuff Blog Tour</a> is visiting <a href="http://countrycookingwithjanille.blogspot.com/">Country Cooking with Janille </a> this week.   Janille is a small town country girl who loves to cook. Her blog is full of her family favorites, along with some recipes she has picked up along the way. ENJOY!  We know you will enjoy her blog as much as we have. Every recipe we have tried has become a family favorite. Today we want to share her recipe for green sauce. I love this on breakfast burritos and Mexican chicken dishes.</p>
<h3><a href="http://countrycookingwithjanille.blogspot.com/2010/01/green-sauce.html">Green Sauce</a><span id="more-288"></span></h3>
<h3><em>1 lb. fresh tomatillos<br />
3 large jalapeno peppers, seeded<br />
1 medium onion, chopped<br />
2 cloves garlic<br />
6 sprigs of cilantro, stems removed<br />
2 cups chicken broth<br />
1 Tbl. vegetable oil<br />
Husk tomatillos and cut in half. Stem and half peppers. Boil tomatillos<br />
and peppers in chicken broth for 10 minutes. Strain, reserving broth.<br />
Combine tomatillos, peppers and remaining ingredients, except for the<br />
oil, in a blender and mix until almost smooth. Heat oil in frying pan<br />
until very hot. Add the tomatillo mixture and cook for 4−5 minutes,<br />
stirring constantly until dark and thick. Add reserved broth to mixture<br />
and bring to a boil. Reduce heat and cook until thickened,<br />
about 10 minutes, stirring occasionally.</em></h3>

<p><a title="what's for dinner" href="http://www.mom-stuff.com/What_s_For_Dinner_Review.html" target="_self">Mom-Stuff Product Review</a>. This weekend while visiting the What Woman Want Expo in St. George, Utah I found the most unique recipe book I have ever seen. What’s For Dinner by Jana Schofield.</p>
<p>When raising my family I hated the question “ What’s for dinner?” It was the first thing out of everyone’s month when they returned home from school or work, or worse when I returned home after work. They didn’t even say “Hi Mom” before the dreaded question. The decision of what food to fix for dinner has always been more work to me then cooking or the clean up. I wish this book had been available many years, ago. Jana Schofield is a mother who had the same problem. She has worked on this book for thirty years and it is now available to solve this problem for you. This book is a format of menus with easy-to-read recipes for convenience, organization and efficient use of time. I love this concept because it simplifies a mother’s duties to give her more free time to enjoy her life. So buy it now and give yourself more time to play with your kids at the park, have lunch with a friend or treat yourself to a pedicure.</p>
<p>I am really excited to have meet Jana. She is a really cute little lady. I have a new girl friend. I am so blessed to have all of you wonderful moms in my life.<span id="more-101"></span></p>
<p>Jana’s story on her own words:</p>
<p>Thirty-one years ago I sat down to make menus for the first time as a newlywed. I wanted to impress my husband with my culinary skills. I had taken many home economics classes, had helped my mother, and had my own collection of recipes, including a small recipe book we received as a wedding gift. My goal was to prepare something different for dinner every day for the first year. It didn’t take long to plan the first week, exhausting my entire recipe collection. It took me hours to finally produce a two-week menu plan, and it was not a pleasant experience. I thought to myself “why would I want to do this every week for the rest of my life. I’ll do it once and then it will be done”! That was the beginning of my “book”…a three ring binder with a notebook paper that I have added to over the years.</p>
<p>The small cookbook we received contained a couple sample menus with recipes for the items included in the menu. It was very convenient to have all the recipes together on one page, rather than searching through the book for three different recipes, and then flipping back and forth as I was preparing them. I thought surely there would be a book with more of the same thing that I could buy. So my search began. I found a magazine offering a full month worth of menus in every issue. As I looked through the menus, most of them consisted of dishes I couldn’t pronounce. Some of the items sounded good, but there were no recipes. Others contained ingredients I had never heard of! Some recipes would call for a white sauce…okay…how do you make a white sauce?</p>
<p>Based on my experiences and the experiences of others, I have tried to create a book, dedicated especially to the new cook with limited or no experience. Now that I have married children, they have been very helpful in letting me know if the recipes are understandable. I have included recipes for even the most basic things. Over the years I have always been on the lookout for new recipes and paid attention to “what has been served with what” so I could come up with creative and different menus.</p>
<p>I have gone full circle with my book—back in the days when there were just two of us…as we added 6 children over the years and now…when I never know if there will be two or sixteen for dinner.</p>
<p>When I first started this book, it was for my own convenience. It has expended through the years; and as I have talked with friends and others, who struggle with the same question every day. “What’s for dinner?” I felt a need to share it with others. The book I wanted to buy as a newlywed is now available for everyone!</p>
